25og butter
1/2 cup caster sugar
1/4 cup condensed milk
1 tsp vanilla
2 1/3 cups flour
2 tsp baking powder
1 1/2 cups chocolate chips
Preheat the oven to 180c. Line 2 baking trays with baking paper.
Cream the butter and sugar with an electric beater until light and fluffy. Add the condensed milk and beat again. And then do the same with the vanilla.
Fold in the flour and baking powder, and then mix in the chocolate chips.
Lightly flour your hands and roll generous teaspoonfuls of the mixture into balls. Place them on the prepared oven trays (allowing room for them to spread). Use a fork dipped in flour to flatten them.
Bake for 12-15 mins until the biscuits are firm and starting to colour.
Leave them to cool slightly before transferring them to a cooling rack.
Tip:
Always measure your ingredients carefully when making biscuits. Creaming the butter and sugar and gently folding in the dry ingredients will make biscuits that are light in texture. If the mixture is too ‘soft’ to roll in to balls, add a tiny amount of extra flour.
